I like slumber coaches and am for an excuse to buy one. Does anyone have photographic evidence that one in Amtrak livery might have made it to the western US. Preferably in Phase III paint.

I don't know about Phase III paint, but yes, Amtrak slumbercoaches were common in the west. I saw them in the Empire Builder regularly in the mid and late 70s.
Amtrak 2023 "Silver Repose", ex-CB&Q, in 1979, had lost its "pointless arrows", so might be Phase III:
