I work as a freelance journalist and photographer with the rail industry in Australia.

I should have included "comedian" as a career path, it seems.  ;D ;D ;D  

I was trying to include careers of modelers I know or knew. Unless you're a degreed architect, Lee, you're either "skilled trade" or "other" since you're self-employed. As to self-employed store owners, I really had them in mind with "retail sales" as much or more than sales clerks.

There's no category for building trades.  What about carpenters, plumbers, electricians, masons, drywallers, etc.?

Yes, but categorically, building trades are usually separated from  metalworking trades like machinists, welders, and fabricators.  Two completely opposite ends of the skilled trades.
