I'm trying to avoid falling into the X71 trap (ie, I have a disproportionate number of a single class of car).

Meh, you can get away with a bunch of X71’s traveling as a single block (hauling paper or whatever).  I encourage it.  The Conrail RBL’s seemed more solitary and were generally smaller classes (than the X71’s), but you could scatter a couple into a Northern Central-sized layout.  Or yeah, go full on food warehouse.
