How did the SP use these in service?   Did they use them just like any other caboose or did they have special handling?

Special handling, purely. Primary purpose was originally as in-train security escorts for automobile trains before the advent of fully-locked, closed-end racks. The security aspect was then extended to other trains containing high-value consumer goods, especially in southern border states, Texas in particular.
