I know where the tackboards go, and with intense scrutiny found the teenyweeny holes in the roofwalk where the angled grab irons go.... but what are those little rectangles attached to the sprues?

Aren't those the smaller tackboards?  They go either on the sides or the doors, depending on the prototype.
