Yes.
Generally, steel mill products going out, scrap metal coming in.  But, in many other cases, anything that would fit, and did not need a roof over it. Until many railroads modified them by putting roofs over them.

Great! I have a scrapyard that cuts up old RR passenger cars along with collecting general metal junk so a couple of these would be fantastic. I have made removeable custom scrap loads for my MTL gons but I probably can rework them to fit these guys. I have been thinking about adding more gons and these are perfect! (wood side scrap gons ain't prototypic)

I dunno. The Atchison, Topeka and Santa Fe was generally considered prototypical, and they definitely used their wood sided, war emergency gons for scrap metal.  And several other classes of wood gons that preceded them.  See p. 153 of the ATSF book on gondolas and flatcars for a photo.  The war emergency gondolas were the prototypes for the CNJ and NYC cars in your photos.

And while I'm not going to waste time looking for photos of 2 dozen other railroad's wood gondolas with scrap loads, I am reasonably certain they exist.

Scrap metal in composite gondolas is totally legit. No need to even invoke Ed's law.

GN, at least, hauled ore concentrates in theirs.  One gold mine in northeast Washington insisted on these (or similar) cars, and that all holes be plugged, so the concentrate couldn't leak out.  They'd seal the holes, and, as soon as the car was empty, the GN shops would could cut new holes so water wouldn't collect in the car.  Next time it went back to the mine, they plugged the holes again...

That looks suspiciously like the Silver Bridge.

The wreckage is from a curved top chord double track steel girder bridge I was building out of stock plastic structural shapes -- until I left it on the roof of my car and drove off. (don't ask for the story). The pieces I found when I went back to see where it landed went into several gon loads of scrap.
