Does anyone know of anyone who makes Ecofab covered for gons?

I found this on Shapeways, maybe you could contact @bnsfdash8  to see if they could do the one in your link.

I seen another example more like the one in your link on Pacific Western Rail Systems website, but only in HO.  It was done in resin.

I've been looking for those as well, along with the gondola covers used in Canada to haul copper concentrate.  I have a pair of covers for N Scale MDC gons from Carlos Workshop via PWRS, and "yes" they are cast in resin.  I am wondering why no one has tried to mass produce these yet.

This was my attempt at them. I  vacuum formed the covers and was going to resin cast  the posts and clamps and glue in place.
