I ran across this product for those of you interested in modeling street running in cobblestone: http://railnscale.com/2014/11/08/n9032-n9532-walzen-n-1160/

The manufacturer has several version of cobblestone, rollers with rail guides and without, and a simple stamp-version.

Very cool idea, the website says to use DAS air dry modeling clay. I found it on Amazon and at Michaels http://www.michaels.com/das-modeling-clay/M10130210.html

I've used it. Quite common in Britain. There is something similar in America that I used growing up in school, can't remember what it was called though. It's easy to work with and cleans up with water, which is good as it will get all over your hands.

I'm pretty sure it doesn't. Once it's cured it's cured.

This website also has grooved trolley track, which could be used as protected street running track too. I have never seen this commercially produced in the US.

If you have a lathe you could possibly chuck it up and turn a .010 groove for the rail head to recess into it. May also have to take the same amount off the face of the section that makes the groove.
