For a great read about the history of dining on the railroads, try "Dining By Rail" by J. D. Porterfield. Not only a fascinating story about how feeding passengers evolved from scheduled stops at sleazy diners to full-blown dining cars, but half the book contains actual recipes for some of the meals served on a variety of railroads large and small. Be advised: these are not "heart-healthy" dishes.
