Are the coupling distances on these car a lot more than they should be or is it just my eyes?  If so any suggestions on fixing it?

They are probably using an Atlas truck with the extended coupler box or if not the Atlas truck then one very similar.  Anyway the coupler box is extended to clear the outboard axle.  Both the Accumate coupler and the McHenry kept the same shank length as the MTL coupler.  In the case of the McKenry that was unnecessary as the pivoting action of the coupler knuckle was contained in the coupler head and not back in the coupler box as with the MTL and the Accumate.

Body mount or replace with MT trucks. Atlas trucks are slowly getting retooled with more compact coupler boxes but so far they are only coming on new product, not available seprately.
