I’ve only seen pics of the cars in freight consists, such as the first photo in this thread. Perhaps, since the cars were acquired secondhand, it’s merely that they were running on their original trucks rather than some kind of express service. The car in the first photo appears to still be riding on its original trucks.

No doubt when the winery bought these old milk reefers (once the milk traffic went to trucks) they came with the express trucks. I doubt they'd go through the expense of replacing them until they became unsafe or too maintenance-prone. But no doubt some of the express trucks eventually wore out enough to need replacing with standard freight trucks. I think you could model both versions prototypically.

Some of the milk cars were either delivered with or had early on, a truck that resembles a symington-gould but with friction bearings, apparently modeled on some versions of the cars by Intermountain ( http://www.spookshow.net/trucks/symington.html ).  These trucks appear in photos of some cars during the period when milk service was still going strong.

And D&H had what I would speculate is a very early version of such trucks ( http://whiteriverdivision.blogspot.com/) -
